Is there a difference between almond flour and almond meal?
Considering this, can I use almond meal instead of flour?
When substituting: Almonds are not wheat. So its best to use substitution rules when using them in a recipe that doesn't specifically call for almond meal or flour. So, if the recipe calls for 3/4 cup of all-purpose (AP) flour, use 1 1/2 cups of almond flour.
In this regard, can I make almond flour from almond meal?
The short answer is yes – but there's more to the story. Almond meal and almond flour are two labels for gluten free flours made from finely ground almonds that are often used in paleo and low carb baked goods. This will affect the texture and flavor (slightly) of your baked goods.
Almond meal (finely ground almonds) will save you a lot of time, but you can also use regular almonds that you can grind yourself with a food processor. They do not have to be blanched! I've made successful macarons using pistachios or hazelnuts to replace almonds entirely.
