When in danger, they deploy their tails to ward off likely predators that they sense around them. The tail is used by squirrels as a direct means of communication among themselves, especially in mating season.

Most bone collectors have found bones, skulls or even antlers or turtle shells with teeth gnaw marks on them in the outdoors. This is likely caused by squirrels in most cases. They do this for two reasons: A) As a source of minerals sparse in their normal diet & B) To help keep their teeth from getting too long.
If a predator grabs a squirrel's tail, the tail's skin (and sometimes a few vertebrae) will harmlessly detach, allowing the squirrel to escape. This is why you might occasionally see squirrels with partial or missing tails.
